1/2 c rolled oats
1/2 c fresh oat flour
1/2 c honey
1 c milk

Instructions – Mix into a liquid pancake batter and let ferment on the counter overnight. In the morning spoon into fat or oil to pan fry. For a heartier bread add one to three eggs. Fruit or other pancake additives are a welcome addition!

2 cups rolled oats
1 teaspoon cinnamon
4 egg whites
A little butter for frying

Instructions – Mix together the oats, cinammon and egg whites in a bowl until well blended. Heat the butter in a frying pan over a medium heat being careful not to let it burn and go brown. Spoon the mixture into small cake shapes in the hot fat and gently fry for 4-5 minutes each side. Serve hot on their own or topped with your favorite chopped fruit and/or maple syrup.
